Maple-Roasted Acorn Squash

I found this recipe last year and wish I had it sooner - I made some personal tweaks and this came out a 10/10 Thanksgiving talk of the table! This is a sweet and elegant dish that can elevate any meal.

Gather ingredients: (serves 2)
1 acorn squash, halved and seeded
2 tbsp butter
3 tbsp pure maple syrup
olive oil
cinnamon
salt
black pepper
Let's Get Mixing:
Preheat oven to 350 degrees.
Wash and dry the acorn squash and then cut it in half from stem to stem. Pop it open and scoop out the seeds.
Place the squash face side up on a baking sheet. Add 1 tbsp of butter and maple syrup to each half, glaze the sides with olive oil and sprinkle with the salt, pepper and cinnamon.
Bake for 40-60 minutes, until the inside of the squash is tender to touch.
Drizzle with remaining maple syrup and serve!
*Although high in sugar, pure maple syrup is a natural antioxidant with properties supporting the reduction of inflammation and boosting energy levels. Acorn squash are also rich in nutrients like Vitamin C , Vitamin B6 and fiber.
