Easy Grilled Chicken Salad

Summer time happiness! Chicken salads are a BBQ fav and a side dish that never fails. You can even mix your own vinaigrette! Or - add in some fruit like watermelon, strawberries and blueberries - cooking is creative, have fun with it!

Gather ingredients:
Organic spring salad mix (arugula, kale, green/red leaf lettuce)
2 chicken breasts, grilled + sliced
2 tbsp crumbled feta cheese
1/4 cucumber, diced
1 tomato, diced
1 bell pepper, diced
1 scallion, diced
Let's Get Mixing:
Always rinse your produce. Fill a large mixing bowl 3/4 way full of spring salad mix.
Add the diced vegetables on top and follow with the grilled chicken pieces.
Sprinkle feta over top of the salad.
Mix with your favorite vinaigrette or dressing - and enjoy!
