Spinach + Feta Omelette

This easy breakfast dish is packed with antioxidant properties and protein! Spinach is known to support healthy eye-vision, healthy bones and may support weight management - natures self-care guru! With added feta, this dish has a total protein value of 38 grams - 19 grams per serving!


Gather ingredients: (makes 1 omelette, serves 2)

  • 4 eggs

  • 1/4 cup milk or cream (water for low-cal)

  • 2 tsp olive oil (or butter)

  • 1 cup spinach (frozen or fresh)

  • 1 scallion, diced

  • 1 clove garlic, minced

  • 1/4 cup feta cheese (or goat cheese)

  • salt and pepper to taste


Let's Get Mixing:

  1. Grab a mixing bowl, add the eggs and whisk together. Add the milk or cream (or water for lower-calories) and whisk thoroughly.

  2. Place a frying pan on medium heat with 2 tsp of olive oil or butter. Add the garlic, scallion and sauté for 1 minute. Add the spinach and cook down until leaves are mixed well with the garlic and onion.

  3. Raise the heat one notch to med-high heat, add a pinch of salt and pepper to the egg mixture, quickly whisk and add that to the pan.

  4. Turn the heat back down to med-low, letting the middle of the omelette cook, lifting the edges (or popping the bubbles in the middle) to let the liquid go underneath and continue to cook evenly. (Flipping here is optional)

  5. Once the top-side of the omelette has almost settled, add Feta to half and then fold with the other half.

  6. Turn off element and flip the omlette to evenly distribute the heat. Cut into 2 servings (or 1 for the super hungry!) and enjoy! * benefits of ingredients in this dish support healthy immunity and a great source of overall energy! Variations of this omelette include steak + Swiss cheese, veggie, western or 3 cheese (substitute spinach and feta with desired ingredients).
